Selection
The vineyards are situated between 120 and 150m (390-490 ft) above sea level. They are planted on gentle southeasterly slopes where they benefit from plenty of sun exposure.
Winemaking
The grapes are picked at night to preserve the grapes’ quality potential. After de-stemming, we collect the first press juice to obtain the best acid/fat balance. After a light settling, the wine ferments at 17/18 °C for around twenty days and will be aged on the fine lees from its fermentation for two months.
Maturation
100% stainless steel vat with bâtonnage (stirring of the lees).
Soil
Infertile clay, limestone and a crumbly sandstone known locally as “grès de Carcassonne”.
